Ingredients
1/2 cup mayonnaise (choose mayonnaise without soybean oil)
2 teaspoon extra-virgin olive oil
4 teaspoons good quality Dijon mustard
2-3 teaspoons capers (or chopped pickles)
1 tablespoon fresh lemon juice
1/4 teaspoon turmeric powder
1/4-1/2 teaspoon sea salt

10-12 hard boiled eggs

Instructions:
In your food processor bowl whisk together the mayonnaise, olive oil, mustard, capers, lemon juice, turmeric, salt, and several grinds of black pepper.
Mix in the chopped in halves hard-boiled eggs, pulse for few seconds until desired consistency is achieved.
Serve the egg salad on a bed of greens, in a lettuce wrap, or on a piece of whole-grain toast, and top it up with micro-greens.
